Abstract

Sugar beet pulp is a promising raw material for obtaining food ingredients, as it contains cellulose, hemicellulose, pectin and protopectin. However, at present, scientists are paying attention only to the development of technologies for obtaining pectin, while further processing of the pulp is not envisaged, despite the high content of other food ingredients in it. The aim of this study is to obtain a cellulose-hemicellulose complex using physicochemical and biotechnological methods from sugar beet pulp from which pectin was previously extracted. To achieve the set goal, methods of physicochemical and biotechnological processing of beet pulp were used: acid and enzymatic hydrolysis of pectin substances, as well as delignification using hydrogen peroxide solutions. A comparative analysis of the efficiency of hydrolysis of pectin substances of beet pulp, from which pectin was previously extracted, was carried out using a solution of hydrochloric acid and pectinase at various dosages. It was established that the highest degree of hydrolysis of pectin substances of 24.56% is achieved under the influence of mineral acid, while at a pectinase dosage of 300 units/g of dry matter of beet pulp – 22.81% of pectin substances. The effect of hydrogen peroxide concentration and processing time on the content of lignin, cellulose and hemicelluloses was revealed. It was found that the optimal conditions providing complete hydrolysis of lignin are hydrogen peroxide concentration of 19.5% and processing time of 45 minutes, while the content of cellulose and hemicelluloses remains virtually unchanged. The obtained results create the prerequisites for the development of a technology for the transformation of beet pulp, which allows the extraction of food ingredients that form its chemical composition with their high yield and quality.
