Annotation. Today, due to the growing volumes of aquaculture production, the efficient usage of secondary raw materials obtained from fish processing is becoming increasingly relevant issue. The connective tissue proteins contained in this raw material that are extracted in the form of a hydrolyzate, are of great interest as a component of a healthy diet including collagen and peptides that have physiological significance. One way to process hydrolyzates is to obtain a structured product, which can be an additive in molded fish products and provide them with a complete replacement of fat and partial of muscle raw materials. However, this additive has a pale color, which makes it unsuitable for forming a pattern on the fish products cut. In this study, samples of a structured additive based on the common carp heads hydrolyzate were obtained. Color characteristics of the samples were improved with coloring components use that are: fermented rice and perch liver. Optimal structured additive samples were determined by organoleptic, rheological and physical methods of the research. These methods are proposed to be used as the basis for a comprehensive assessment of the structured additives quality.
