There is currently great interest in the use of natural biologically active substances of plant origin in various industries. Bitter orange (Citrus aurantium L.) is widely used in the food, pharmaceutical, perfumery, and cosmetics industries. The aim of this study was to systematize and analyze scientific publications from 2000 to 2026 devoted to the study of the active components of Citrus aurantium L. and the possibility of its application in the food industry. Most biologically active compounds are found in all components of the Citrus aurantium L. plant, but each part (fruit, peel, leaves, flowers, seeds) has its own phytochemical profile, which includes phenolic compounds (flavonoids, flavanones, flavones, phenolic acids), alkaloids, vitamin C, essential oils, etc. This phytochemical profile determines the biological properties of Citrus aurantium L. These include antiproliferative, anti-anxiety, antioxidant, antimicrobial, and other properties. Essential oils of Citrus aurantium L. are primarily used in industry due to their distinctive aromatic profile. Given the rich composition of Citrus aurantium L., research into its use in specialized products is relevant
