All over the world, work is underway to find alternative types of milk raw materials. Many countries of the world have long been producing dairy products based on the milk of small ruminants: goat and sheep.
The use of goat and sheep milk for the production of various types of milk and dairy products in the world is actively increasing, although their share is significantly lower compared to cow and buffalo milk worldwide. Sheep and goat breeding is a traditional, historically rooted livestock sector in Kazakhstan. The article presents the results of studies of the state of sheep and goat breeding in the world and on the territory of Kazakhstan, the peculiarities of lactation of small ruminants, the average composition of goat, cow and sheep milk, as well as the physicochemical composition of milk in the autumn period, has been studied.
